Maricopa County Measures & Motivates Handwashing Compliance
Maricopa County's award wining program was introduced as an incentive for operators to gain control of their handwashing process. If they can reach a documented minimum of one handwash per hour they are free to use gloves where they see fit rather than comply with the strict no-barehand-contact rule for handling of ready-to-eat foods.
To some this program is known as a Barehand Contact Variance. Handwashing For Life considers it the birth place of 5 Star Hand Hygiene. Today over 250 restaurants operate under this creative program.
