The school foodservice world owes Carmel Salazar, HACCP Manager for the Clark County School District, and the Southern Nevada Health District a debt of gratitude. Their pioneering use of the SaniTwice protocol not only improved school food safety in Clark County but has now opened the door to expand its use across the country.

Conference for Food Protection issue III-025 was approved as amended and then passed by the voting delegates on the final day of the 2012 CFP for inclusion in the Emergency Action Plan for Retail Food Establishments. SNHD's multi-year use of SaniTwice is believed to have provided an important credibility factor.

Ms. Salazar welcomed the SaniTwice protocol for its convenience and its documented efficacy. Her early adoption was later supported by a peer reviewed study appearing in the Journal of Food Protection.

The SNHD team was honored earlier with an NSF Leadership Award for their role in offering this enhanced alternative for water-scarce situations.

The Handwashing For Life Institute thanks the CCSD and SNHD teams for lighting a path for innovation in food safety.
